The Best Spaghetti Squash Recipes

Pumpkin season arrived. It's time to enjoy in these lovely vegetables all over again. There are so many varieties to choose from, but today is time for spaghetti squash recipes. Starting with the most simplest one, and continuing with more interesting and surprising recipes. So, here is the basic recipe to follow.

Preheat your oven on 350 degrees, clean and cut your squash in half and remove the seeds. Take a pan, cover it with baking paper and grease it with some butter. Place the half side down and bake for one hour or so. Using a fork, scrape strings of flesh into some bowl, toss with butter and add some Parmesan if you want. Season with salt and pepper.

Once you make your veggie noodles, you can serve them with any of your favorite dishes, instead of regular pasta. For example, you could serve them with nice, juicy meatballs, with meat and sauce or whatever. In fact, you could simply make regular Italian salsa and pour it over your vegetable spaghetti, have some Parmesan cheese with and serve with any salad you prefer. Or you could use some of these ideas.

So, you can make this salty sort of cake, using filo pastry, cottage cheese, sour cream and egg. You will need squash spaghetti, salt, pepper, butter, and cottage cheese, all combined. Each filo sheet should be covered with this mixture, rolled and placed into a pan, previously greased with melted butter. You could also use some vegetable oil, but butter tastes better with these ingredients.

Preheat the oven on 350 degrees. Once you're done rolling pastry sheets, cover these rolls with sour cream, add a little salt on the top and bake for thirty minutes or until done. This lovely salty dessert tastes great with a glass of good wine, and if you eat it with yogurt, it might be one really nice and light meal.

If you prefer interesting salads, here is one nice and easy to make recipe for you. Prepare squash noodles on the usual way. If you want, you can bake the whole squash in the oven first, just make sure to use a knife to prick it all over before. Some people even bake them in the microwave, and this is much faster, it takes maybe twenty minutes or so.

Anyway, you will need one pound of prepared spaghetti, 200 grams fresh spinach, 200 grams diced feta cheese, one clove minced garlic, one tablespoon olive oil, salt and pepper. If your spinach is really young and soft, use it as it is, if not, cut it into stripes. Combine olive oil with spices and garlic and mix all your ingredients together. Enjoy in your light and fulfilling salad.

Or you can do something really simple. Make your favorite pumpkin soup. When it is almost done, add vegetable noodles in. Add a few drops of good pumpkin seed oil on the top, sprinkle with chopped parsley leaves and add one spoon of good sour cream on the top, if you like. This lovely soup tastes great with toasted bread, but it's pumpkin seed oil that gives it that special aroma and taste.
