There are different varieties and each of them have their own functions and specializations. But if you have a certain goal, you need to choose according to what you want to achieve.

These sheets are made out of different materials. But today, most of the sheets are made out of different types of metal. This is because they do not burned or get affected by heat. But they could still make use of the temperature to cook what is being placed in the sheet. If you want to start baking, you need to make sure that you have the right sheets so that your first try would not be so much of a failure. It would also be better if you purchase three trays. This would make the baking process continuous. While you have one on the oven, the other one could be cooling down as well. And you can prepare for the next batch on the other one.

There are various choices for the trays that you can use. The best option would be to go for a heavier one that has a duller texture. According to most experts, this is a more expensive option. But since it is durable, you can make use of it longer.

It would be better to have trays that do not have rims. This will cause the heat distribution to be uneven. Most of the time, people would have to make use of the rimmed ones. If you already have it, then, then it would be better to make use of the bottom part so that it would be rimless.

The dough would have to expand when it is subjected to fire. And because of this, you need to place the mix in regular space intervals. This would also mean that you need to make use of a bigger sized sheet. However, it should not be too big so that it would not affect the growth of the cookie.

As a beginner, you will have to encounter various types of sheets. You might easily get confused so you have to know which ones you should not use. It should not have a darker color since this would cause more burns and it is the usual reason why cookies become over browned.

This is also the same for the shiny ones. You have to be careful not to choose them the reflection would increase the temperature. You cannot predict the time that it would be cooked. Since the temperature is increased, it would likely be burned. You have to avoid this if you do not want to have this result.
