One thing to remember is that you do not want to use larger tomatoes as they have far to much water in them and will take much longer to reduce. Look for medium sized tomatoes as they will have large amounts of flavor to them.

Basil and garlic should be added to the mixture while it is heating up, along with a touch of salt and pepper to enhance the flavors. Oregano and chilies are also commonly used spices but don't be afraid to get creative and experiment with your own favorites to create something that caters to your own tastes.

To get that real authentic feel when you are in the kitchen then try to do everything by hand, meaning no electronic devices. You will need to crush the tomatoes into a fine pulp with no leftover chunks and mix all of the ingredients together. There are several hand held tools that are traditionally used in the process for crushing the tomatoes and removing their seeds, and if you can find them they will make the process much easier.

Make a large batch to put into jars and store for several months before they will go bad. You would jar them the same way that you do jams and preserves. By first boiling the jars to sanitize them and then filling them up with sauce and sealing them tightly. After they are sealed you need to place them into ice cold water, this will give it an air tight seal and prevent any bacteria from getting inside and ruining it.
